Let alone the task of growing the Olives and overcoming all the hurdles that nature and now global warming lay in our path.

The mission impossible is to hand pick and mill our olives to produce our oil all in less than 12 hours every day until we run out of olives.

Trust me the number of adversities we have to overcome during the olive picking season are unimaginable to anyone outside the inner workings of a traditional olive harvest in Tuscany!

Here Murphy’s Law rules unchallenged: everything that can will go wrong and it will do so several times unless you have a contingency plan for absolutely everything!

Two or four of everything – redundancy – is the keyword!

Helpers, drivers, trucks, tractors, pickers and so on! Equipment will fail, trucks will breakdown people will miss deadlines it’s just business as usual.

Hour after hour, day after day the bins slowly fill up with olives, millions of them!

They move from the Olive grove to the farm…

The refrigerated trucks get filled with the bins and off they go to the mill.

And after hours and hours of careful milling that often ends at dawn, out comes the prodigious OLEA PRILIS oil!

Well, we made it again! And what an amazing sense of satisfaction! It is an ancient Joy one that transcends the economic value of the crop, it is that incredible feeling of an all-hands Job well done!
