D’AMARE is Certified Organic single-variety Extra Virgin Olive Oil crafted from Grignano olive trees grown on our estate. The olives are carefully hand-picked at their perfect ripeness and pressed immediately in our on-site mill. Designed to surprise, D’AMARE delights with delicate hints of white fruit and citrus, evoking a Mediterranean dream infused with the sophistication of Veneto and the vibrant hues of Amalfi.
D'amare and Olea Maris
D’AMARE draws inspiration from an eternal feminine figure—perhaps a mermaid, a nymph, or even a goddess—linked to the sea, love, and olive trees. This oil is our most ambitious creation, blending the Venetian elegance of Grignano olives with the passion and richness of Tuscany. These olives are cultivated along the Tyrrhenian shores of Castiglione della Pescaia, Tuscany, where they thrive under the sun, sea breeze, and salt air. They absorb the region’s vitality, transferring its essence into this fragrant and healthful olive oil.
Olives and Milling
The olives for D’AMARE come exclusively from groves on our estate in the unspoiled wilderness of the Maremma, one of Tuscany’s most pristine regions. Here, the Grignano variety flourishes, expressing its distinctive citrus notes that range from zesty lemon to warm mandarin.
Organoleptic Characteristics
D’AMARE shines with a light-yellow colour, subtle green highlights, and crystalline clarity. The aroma is fresh, aromatic, and well-balanced, featuring delicate notes of freshly cut grass, citrus, and almond. On the palate, the oil begins with a soft sweetness, followed by a gentle bitterness and a pleasantly peppery finish, creating a symphony of flavors that enhance both taste and aroma.

Wellness Benefits
Despite its smooth and delicate flavor, D’AMARE is naturally rich in polyphenols, potent antioxidants that help protect blood lipids from oxidative stress. Consuming just 20g daily provides at least 5mg of hydroxytyrosol and its derivatives, delivering EFSA-approved health benefits (EU Regulation 432/2012 and EC Regulation 1924/2006).

SUPERTUSCAN OLIVE OILS
What do we mean by “Super Tuscan” EVOO?
It is not a new classification, nor a denomination. It is a cultural reference — a tribute to the creative freedom and independent spirit of some of Tuscany’s most innovative olive growers. These oils are produced in Tuscany using locally grown olives, sometimes combining native cultivars with others more recently introduced, to create unique sensory profiles that explore new expressions of Tuscan identity.
The term draws inspiration from the post-World War II renewal of Tuscan winemaking — when bold producers, like Marchese Incisa della Rocchetta with Sassicaia and Antinori with Tignanello, dared to depart from rigid DOC norms, giving birth to what later became known as “Super Tuscans.” Their approach was not about abandoning Tuscany, but rather reimagining it with respect and passion.
In that same spirit, we produce EVOO classified as 100% Italian — and made entirely in Tuscany — without claiming official certification, but with the ambition to contribute to the narrative of Tuscan excellence through transparency, quality, and innovation.
