Olea Prilis is more than an olive estate – it’s the heart and soul of a family, deeply rooted in the creative and nurturing energy of women. Inspired by a passion for sustainable living and well-being, Candice and Fabrizio’s family brought their dream to life.
At the core of this story is Candice, a violinist, a patron of the arts, and the creative force behind the enterprise. She brings unique wisdom and harmony to the estate, balancing integrity and innovation with her artistic vision. Together with their two daughters, Livia and Tullia, Candice ensures that every bottle reflects care, authenticity, and the deep connection to their family’s ethos.
Fabrizio, formerly a financial executive, shares this vision, dedicating himself to the craft of olive growing and milling with precision and passion.
Yet it is the feminine touch – thoughtful, nurturing, and endlessly creative – that defines Olea Prilis and makes its oils so special.
The estate, lovingly developed and restored is equipped with an advanced on-site mill, 22 hectares of groves and focused on extraordinary olive oils each a testament to this loving collaboration.
Our Motto is: “Live as if you died tomorrow and farm as if you lived forever”.
Ours is a family-run olive farm, in which a wonderful variety of people and olive trees, each with their own peculiarities, contribute to the exceptional culinary and nutritional profile of the oils we produce.
We are organic farmers, focused on protecting and enhancing biodiversity. Our lifelong commitment to sustainability is present in every decision, action, and detail of our work, and it delivers to our customers a product that fully meets their environmental ambitions.

About our brand name “Olea Prilis”
Our farm lies where a salty lake, known to the ancient Romans as “Lacus Prilis,” once existed. The process of draining the lake commenced in 1592 and was only completed in the 1960s, necessitating painstaking human efforts. Ultimately, the lakebed became home to our trees, which we christened “OLEA PRILIS.” In this nomenclature “Olea” denotes the botanical classification of the olive tree within the genus “Olea,” while “Prilis” is our testimony to the region’s fascinating story.

About our farm
20 hectares of olive groves facing the mediterranean sea, in one of the most unspoiled and fascinating areas of Tuscany, are the kingdom of Olea Prilis. Here, strong temperature variations between day and night, salty winds, and the challenges of growing in clay soil, force our trees to earn every olive they yield, giving us amazing fruit to produce oils of great structure and with an exceptionally out of the norm phenolic charge.
Ours is a purely family-run olive growing reality, in which a wonderful variety of people and cultivars, each with its own peculiarities, contribute to the exceptional culinary and nutrient profile of our oils.
About Our Mill
Our mill is a state-of-the-art dream machine, built in 2023 using the most up to date MORI-TEM machinery, it enables us to tailor individual “recipes” to each variety and each different batch of olives. We can vary factors ranging from temperature to speed of crushing, malaxing times, apply oxygen, work in a vacuum, fiddle with hourly flows and separation speeds, along with many other variables, all to achieve accurate oil profiles.
