Extracted  using state of the art technology of the renown Mori-Tem mills. Stored and bottled in oxygen free containers for optimum preservation.

At Olea Prilis to ensure the Extra Virgin Olive Oil reaches you, the consumer, in the best possible form and in order to deliver you the finest quality, we strive to:

  • Grow / select first-class olives.
  • Determine optimum ripness.
  • Pick olives without damaging them, preventing contact with soil and other contaminating agents.
  • Store the olives at ideal temperature preventing them from heating in large containers.
  • Begin the extraction process as soon as possible after picking.
  • Select the best in class extraction equipment and standards of the olive mill, in Italian – il Frantoio.
  • Maintain the highest standards of cleanliness and hygiene of the equipment, workspace and operators.
  • Monitor every step of the extraction process reducing duration and exposure to heat and oxygen.
  • Filter immediately the “olive Juice” before storage: Filtering removes moisture content and Sediments. Filtration increases stability and durability of the EVOO.
  • Store in optimum conditions in temperature controlled dark tanks without oxygen.

Our Extra Virgin Olive Oil

At Olea Prilis, we extract our Extra Virgin Olive Oil from olives that we select and pick, prevalently from our own trees that we lovingly cultivate and grow. This reliance on our own land and, and land of our associated olive producers that we know and respect, forms the basis of the transparency, traceability and trust we want to build with our clients. All our processes are open to your scrutiny and all our products are totally traceable.

The respect we have for our trees and olives means that the availability of our Extra Virgin Olive Oil is subject to the laws of nature: Olive trees are not regular in their yields, which can vary significantly from year to year, depending primarily on climate factors, which in turn affects the amount and quality of olives, as well as their yield in oil.
